
Kale Salads
I originally became addicted to these kale salads after I had baby #4. I was crazy low in iron so my mom made me a big green smoothie and kale salad every day. She is an awesome mom and an amazing cook. I thoroughly enjoyed and looked forward to all my greens everyday- and the doctors were amazed at how quickly my iron levels went up! (FYI the iron pills are worthless) This salad is so delicious and although my iron is normal these days- I can’t quit this stuff. Seriously addictive. I make a batch of the dressing and keep it in my fridge for a week or two. I always have the ingredients on hand. It’s my go-to for every big gathering and my most favorite easy “mom meal’“. Can’t survive without it. I use this same dressing to make two different kale salads.
2 Tbsp Mayo
2 tsp Dijon Mustard
2 Garlic Cloves
Fresh squeezed lemon juice- 2 lemons
1/2 tsp Salt
1/2 tsp Fresh ground pepper
1 cup extra light olive oil
1/2 cup parmesan cheese

So simple and delightful. Just mix chopped kale with dressing, parmesan, and croutons. We like to make homemade croutons to make this extra special and satisfying. Throw in some grilled chicken to add protein- Or sometimes I put a fried egg on top! Yum.

Chopped Brussel Sprouts
Chopped Roasted Almonds
Parmesan Cheese
For this salad I simply add chopped brussel sprouts and roasted almonds. I keep the base mixture of chopped kale and Brussel sprouts in a bowl in my fridge. They are both sturdy greens that last which makes it easy to keep on hand for a quick mid-day salad. I roast and chop almonds and keep them in a big Tupperware in my pantry. Then it’s always so easy to throw together the greens, dressing, almonds, + a little parm. SOOOO GOOD!
